Ceil's Cookies

Introduction

My Mom had a friend named Ceil whose husband was a cardiac. She would make these cookies for him to have with tea in the afternoons. My husband and I love them. Number of Servings: 72

Ingredients

    3/4 C canola oil
    1 C brown sugar
    2 eggs
    2 C flour
    1 tsp baking powder
    1 tap baking soda
    1 tsp vanilla extract
    1/2 C chopped (finely) walnuts
    2 C instant oatmeal
    1/2 C wheatgerm

Directions

1.Cream oil and sugar together
2.Beat in eggs and vanilla
3.Sift dry ingredients together and stir into wet.
4.Mix in nuts and cereals until uniformly blended.
5.Drop by teaspoonfuls onto parchment lined cookie trays.
6. Bake at 375 degrees 8-10 minutes or until pale brown.
7.Remove to rack while still warm.
NOTE:This dough is quite stiff and a powerful mixer is a real plus. A teaspoon cookie scoop helps to make the cookies uniform and the recipe will yield six dozen cookies. Also the dough will keep in the fridge well covered for a few days if you don't want to bake them all at once or if you want to make them one day and bake another.
