* 3 medium potatoes * cup of chard * 2 cups chopped cabbage * 2 large carrots * 1 parsnip * knob of butter * salt and pepper to taste * 1 large or 2 medium onions * clove of garlic
Soften onions in large pan with butter, chop and add other veg gradually, with water as needed. Optionally add 1 vegetable stock cube (not included in nutritional calculations) with hot water. Cook on low heat with a lid on for as long as possible - at minimum until potatoes and carrots are soft. Pulverise with hand-held blender or leave 'as is', as preferred.
