Ingredients

Olive Oil, Extra Virgin, 1 tbsp
Onions, raw, 1/2 large, chopped
Mushrooms, fresh, 5 large, chopped
Spinach, fresh, 1/3 package (10 oz), chopped
Wheat flour, white, enriched, 3 tbsp.
Milk, nonfat, 1 cup
Vegetable Broth, 1 cup
Salt, 1 tsp
Pepper, black, 2 dashes
Pink Salmon, 1 can
Dried lemon peel, 2 tsp
Cilantro, raw, 4 tbsp, chopped
Directions
Saute onion in olive oil till soft, then add mushrooms & saute briefly, likewise with spinach.
Add flour & stir well for about a minute. Add milk, broth, & salt & pepper. NOTE: I also used a spice mix called "Greek seasoning"--a blend of oregano, garlic, cinnamon, peppermint, dill, nutmeg, red pepper, & chives; you may want to add some or all of these as well.
Cook over medium heat, stirring often, until the mixture boils; allow to boil lightly for a minute or two so that the sauce thickens a bit.
Flake salmon with fork into the sauce, then add lemon peel & cilantro. Heat through. Serve over brown rice or pasta.
