Savory Oatmeal Pancakes

After a week of food service food, my son asked for some savory pancakes for breakfast. This is what I put together, and they were GOOD! After a week of food service food, my son asked for some savory pancakes for breakfast. This is what I put together, and they were GOOD!
Number of Servings: 10

Ingredients

    1 egg (I use Omega 3 eggs)
    1 cup lowfat buttermilk
    2 packets organic maple brown sugar instant oatmeal
    1/3 cup whole wheat flour
    1 Tbsp ground flax
    1 tsp baking soda
    1/2 tsp salt
    1/4 cup unsweetened applesauce
    1 Tbsp canola oil
    1 Tbsp minced fresh rosemary
    1 Tbsp dehydrated onion flakes
    2 Tbsp Hormel bacon bits

Directions

Makes 10 4" pancakes. Nutritional info is per pancake - multiply per number consumed! Preheat pancake griddle - set temp a little lower than for average pancakes.
Beat egg, add remaining ingredients. Do not overmix. Mix will be thick - add a little extra milk if necessary. Drop scant 1/4 cup mixture onto pancake griddle and spread into a 4" circle. Since this mix is fairly thick, you may not see bubbles coming up like regular pancake batters. Keep an eye on the bottom and turn when nicely browned. Allow to finish cooking. These are delicious without any extras - no butter or syrup needed.
