Sauted Veggie Wrap

Number of Servings: 10

Ingredients

    1 Tablespoon of Olive Oil
    2 Med. Zucchini
    1/2 large red onion
    2 small yellow peppers
    20 baby portabella mushrooms
    10 Gluten Free Corn Tortillas

Directions

Heat oil in non stick pan or wok

Add all ingrediants and cook until soft.

Heat a non stick frying pan. When hot place 1 tortilla in pan for 8-10 seconds, turn and heat 8-10 seconds more or until soft.

Place approxiimately 1/4 cup of mixture in each wrap and roll.

Grill on grill or use clamshell (George Forman) until browned.

Makes 10 wraps
