1 egg 1/2 c. milk 4 T. oil 1 1/2 c. sifted flour 1/2 c. sugar 2 t. baking powder 1/2 t. salt 1 c. blueberries - fresh or frozen
Heat oven to 400 degrees; grease bottom of muffin pan, beat egg with fork. Stir in milk and oil. Measure flour, blend dry ingredients. Stir into liquid with blueberries and mix until flour is moistened. Batter should be lumpy. Don't over mix. Fill muffin cups 2/3 full. Bake 20 to 25 mins. Loosen immediately with spatula. Makes 12 muffins.
