Cabbage Tomato Soup

Ingredients

Onions, raw, 1 medium (2-1/2" dia))
Celery, raw, 1 cup, diced
Zucchini, 2 cup, sliced
Stewed Tomatoes, 3 cup
Olive Oil, 1 tbsp
Mushrooms, fresh, 1 cup, pieces or slices
Cabbage, fresh, 2 cup, chopped
Beef broth, bouillon, consomme, to make 2 cups.
2 cups shredded cabbage
Directions
1. Sautee chopped celery and onions in 1 tablespoon oil oil.
2. Add tomatoes and zucchini and 2 cups of beef broth. Bring to a boil.
3. Reduce heat and seaon to taste. I add 1 teaspon of paprika, and parsley. A little salt and pepper.
4. Simmer for 10 minutes.
5. Puree in blender.
6. Return to pot, add mushrooms and cabbage. Heat to seve hot.
7. You can always sprinkle some shredded parmesean cheese on top.
This makes three sevings each under 200 calories. It make a wonderful hot lunch.
