Submitted by: WENDI_WA1

Introduction

My neice uses coconut flour so I decided to try the pancakes. They are really good. Gluten free, soy free, low fat and carb, and sugar free. You can combine coconut flour with regular flours as well. Makes 16-3" pancakes/4 per serving. My neice uses coconut flour so I decided to try the pancakes. They are really good. Gluten free, soy free, low fat and carb, and sugar free. I love these pancakes. I use xylitol instead of splenda. Coconut milk or almond milk instead of 1/2 &1/2. And instead of butter I use coconut oil. Very good. - 10/5/10

  • Delicious, quick to make. I make a batch and then keep them on hand. I can eat a lot, but not of these - they are so filling. I've put blueberries in them. Just watch them, burn easily. - 12/24/12

  • I, being new to gluten free cooking, made a boo boo. I followed the recipe, but like Dotlarson & 2catsperson, I was a little confused by the recipe. I ended up making TB tablespoon and put in 1/4c eggbeaters. Apparently it should have been 1 1/4 c eggbeaters or 4 eggs. I will make them again! - 2/25/12

  • 1/4 c. eggbeaters does not equal 4 eggs. Which amount works best? - 9/23/11
