Lemon Chicken with Pasta

Introduction

This meal is so quick and easy. The lemon really brightens up the flavor. I usually have all the ingredients on hand, so no trip to the store is required. You can add more or different vegetables and herbs like onions or parsley. This meal is so quick and easy. The lemon really brightens up the flavor. I usually have all the ingredients on hand, so no trip to the store is required. You can add more or different vegetables and herbs like onions or parsley.
Number of Servings: 4

Ingredients

    2 Boneless skinless chicken breasts, cut into strips
    Olive Oil, 1 tbsp.
    Penne Pasta, 8 oz
    Garlic, 4 cloves
    Juice of one lemon
    Peas, frozen, 10 oz
    Swanson Chicken Broth 99% Fat Free, 1/2 cup
    Parmesan Cheese, grated, 1/2 cup
    Salt and Pepper to taste

Directions

1. Cook pasta according to package directions. Drain and set aside.

2. Heat oil in a skillet on medium low. Add crushed garlic until it starts to color.

3. Add chicken strips to the pan. Squeeze lemon juice over the chicken. Cook for about three minutes until browned.

4. Add chicken broth and peas. Cover and simmer on low for about 10 minutes, until peas are warm and chicken is cooked through.

5. Toss chicken mixture with pasta. Salt and pepper to taste.

6. Top with grated Parmesan cheese after plating.

    I would cut out the peas, the texture is weird with them. Otherwise, I liked it! - 5/28/09

  • I really enjoyed this reciepe. I used onion instead of peas (didn't have any on hand), and we ate everything!!! Even the juice on the bottom of the plate!!! Thanks for sharing :) - 10/19/10
