Roasted Butternut Squash a la Sandra Lee

Introduction

Saw something similar on a Semi-Homemade show with Sandra Lee. This is my take on it. Saw something similar on a Semi-Homemade show with Sandra Lee. This is my take on it.
Number of Servings: 4

Ingredients

    1 butternut squash, peeled, and cleaned (or 4 cups prepared)
    1 Tbsp olive oil
    1 Tbsp balsamic vinegar
    .5 tsp kosher salt
    1 tsp black pepper
    Pam non stick spray

Directions

Makes 4 servings.
Preheat oven to 450 degrees.
Spray baking sheet with non-stick spray.
Dice squash. The smaller the dice, the quicker it cooks. I used about .5 inch dice.
Place all ingredients into a bowl and toss to mix.
Pour onto baking sheet and spread to a single layer.
Roast for 10 minutes and stir squash and spread out again.
Roast an additional 10 minutes and enjoy!
