Potato Salad

Number of Servings: 10

Ingredients

    5# bag of red potatoes
    2 stalks Celery
    4 radishes
    1/2 cup onion raw
    2 - 4 Boiled eggs
    5 Tbls Lite mayo
    1/2 cup Vinegar
    1 tsp Mustard (honey or yellow)
    2 tsp Splenda
    1/4 cup Skim milk

Directions

Boil Potatoes with skins on until you can put a fork in them. Allow potatoes to cool in cold water.
Either take off skins or leave on (your preference). Cut potatoes into wedges in bowl. Add celery, onion, and radishes cut up into bowl with potatoes.

Boil 2 -4 eggs and allow to cool. Cut into slices and put into potato mixture.

Mix Lite Mayo, vinegar, milk, splenda, and mustard in separate bowl. Once combined, add to the potato mixture.

Allow potato salad to cool and serve.
