Potato, Ham & Dumpling soup

Introduction

This is a nice filling soup on a cold, damp day. This is a nice filling soup on a cold, damp day.
Number of Servings: 8

Ingredients

    2 Cups cubed Potato
    1 Cup chopped Onion
    2 Cups chopped lean Ham
    1 13 ounce can Evaporated milk
    2 Quarts water
    Season to taste

    Dumplings:
    1 Cup Flour
    2 Large Eggs
    1/4 tsp Baking Powder
    1/2 Tspn Salt
    1/2 Tspn pepper
    Add enough water to make dumplings a bisquit consistancy.

Directions

This soup makes about 8 1-one cup servings.
In two quarts water, add potato, Onion & Ham. Cook until still a little crunchy.
Add canned milk and bring to a boil. Drop 1/2 teaspoon dumpling mixture at a time. Bring to a boil, then drop temp to about 4, or lower heat so soup is at a low boil. Cook for another 15 minutes.
On the dumplings, I make mine a lot less fluffy, so if you prefer the fluffy light type, add more baking powder.
