Introductionthis is a light and quick meal to make

500g veal strips
2 tsp sweet paprika
1 medium onion, finely sliced
2 garlic cloves crushed
400g sliced mushrooms
3/4 cup chicken stock - if using white wine - use 1/2 cup of each
1/4 cup tomato paste
1 tbs worcestershire sauce
1/2 cup lite sour cream
320g dried fettucine
2 tbs chopped chives
Heat a large fry pan. Add the veal and cook until cooked. Transfer to bowl.
Add onion and garlic to frypan and cook for about 2 minutes. Add the mushrooms to pan (if desire wine add at this point) and cook for a further 2 minutes.
Return veal to pan. Add the stock, tomato paste and sauce. Simmer uncovered for 5 mins.
Meanwhile cook fettucine in a large saucepan of salted boiling water. Drain.
Stir sour cream through veal mixture.
Place pasta on plates, top with veal mixture and sprinkle with chives.
