IntroductionNo sugar or oil added, egg whites used No sugar or oil added, egg whites used
1 1/4 cup all-purpose flour
1 Tbsp baking powder
1/4 tsp salt
2 cup Kellogg's All-Bran cereal
1 1/4 cup milk, nonfat
2 large egg whites, fresh
1/4 cup apple sauce, unsweetened
2 tsp Splenda sugar substitute
1. Stir together flour, sugar substitute, baking powder and salt. Set aside.
2. In large mixing bowl, combine Kellogg'sÂ® All-BranÂ® cereal and milk. Let stand about 2 minutes or until cereal softens. Add egg whites and apple sauce. Beat well.
3. Add flour mixture, stirring only until combined. Portion evenly into twelve 2 1/2-inch muffin-pan cups coated with cooking spray.
4. Bake at 400Â°F about 20 minutes or until golden brown. Serve warm.

I halved this recipe. I only have a six-muffin tin. I used wheat flour and egg substitute instead of eggs. I also left it baking for five extra minutes and it could have used alittle more. (My oven is new, but I can't say). I also left the faux-sugar out and the salt. I will make this again. - 8/4/11
I used egg beaters instead of the egg whites, and 2 packets or Truvia for the Splenda. I also added 1 cup frozen blueberries. They are perfect to bring to work for a quick snack. Be sure to use the cups coated with spray instead of paper cups- they stick like crazy! - 3/11/09
