Introduction

Wonderful, easy casserole. Be sure to adjust the nutritional information based on the kind of rice used. I also prepared my rice in the Herb Ox Chicken Broth, so there are a few more calories than listed.

Number of Servings: 12

Ingredients

    2 cups rice (long-grain wild or brown basmati)
    1/2 cup unsalted butter
    1 small onion, diced
    1/4 cup all purpose flour
    1 1/2 cups chicken broth (made with Herb Ox no sodium packets)
    1 (6 oz) can sliced water chestnuts, drained
    1 (4.5) ounce jar sliced mushrooms, drained (or I used 5 medium fresh mushrooms sliced)
    2 tablespoons chopped fresh Italian parsley
    1 teaspoon salt
    1/2 teaspoon pepper
    3 oz sliced almonds

Directions

Cook rice mix according to package directions; set aside.
While rice is cooking, season chicken breasts with pepper. Place with a little water in oven at 350 degrees for 17-21 minutes. Then, let cool & dice.
Melt butter in wok or Dutch oven over medium high heat. Add onion, and saute until tender.
Add flour, and cook, stirring constantly about 1 minute.
Add broth, and cook stirring constantly, 1 to 2 minutes, until mixture is thickened and bubbly.
Stir in rice, chicken, and the next 6 ingredients.
Spoon into a lightly greased (cooking spray is fine; I use olive oil cooking spray) 11 x 7-inch baking dish.
Top with almonds.
Bake at 350 degrees for 15-20 minutes or until thoroughly heated.
