Introduction

Light, delicious and filling. Recipe makes 7 - 4" pancakes Light, delicious and filling. Recipe makes 7 - 4" pancakes

Ingredients

    1/2 Cup Hodgson Mill Baking mix
    1/4 c. egg substitute (G.V or Hy Vee brands)
    2 Tb fat-free, plain yogurt
    2 TB unsweetened applesauce
    1/2 Cup 8th Continent Light Soy milk
    1 TB Splenda
    1/2 Tsp ground cinnamon

Directions

Mix all ingredients together until well blended. Heat griddle on stove. Cook on each side until done. Fruits such as Apples, blueberries or bananas can be added for variety. Makes about 7 - 4" pancakes. 31/2 pancakes make one serving
