Pumpkin Applesauce Chicken Nuggets

Introduction

A great way to make kid friendly food healthier. You can substitue any pureed fruits and vegetables you have in the house (but sweet fruits/veggies work best - try sweet potatoes and pineapple, etc.) A great way to make kid friendly food healthier. You can substitue any pureed fruits and vegetables you have in the house (but sweet fruits/veggies work best - try sweet potatoes and pineapple, etc.)
Number of Servings: 6

Ingredients

    1 lb chicken, cut into bite size pieces
    2/3 c bread crumbs (use whole wheat if you have them)
    1/3 c oats (can grind so they are less visable)
    1/4 c flax seed
    1 egg white
    1/2 c pumpkin puree
    1/4 c applesauce

Directions

Combine egg white, pumpkin, and applesauce in shallow bowl
Combine bread crumbs, oats, and flax in a second shallow bowl
Coat chicken with egg mixture then bread crumbs
Cook chicken 3-4 minutes per side in a nonstick pan sprayed with nonstick spray
You may need to make the chicken in two batches
