IntroductionI use a large muffin tin rather than the smaller ones used for cupcakes. Ingredients listed here make 6 nice large mini meatloafs. 1 lb extra lean ground chicken
1 tbsp EVOO
2 large mushrooms sliced
Green onions sliced
1/4 cup Feta Cheese
1 cup breadcrumbs
1 extra large egg, raw
Bloody Mary Mix for a little kick - 100 gms was the only choice on the list....I used just enough for some added moisture

This is good. I did notice that the spinach isn't listed on the ingredient list. I used Smart Balance oil, 1 lg. Portabella mushroom, diced, and Olivia's baby spinach. I added about 1/4 cup of Ro-tel sauce in it for moisture (it's a tomato sauce w/more zip), and a little on top of each too. - 8/13/12

Ahhh, sorry! I just bought a large bunch at the farmers market. I would say it's probably equal to a half bag of store bought fresh spinach.
