IntroductionThese cookies are best made on a cool, dry, day. They spread quite a bit as they bake, forming lacy wafers. These cookies are best made on a cool, dry, day. They spread quite a bit as they bake, forming lacy wafers.
1 stick (half a cup) of unsalted butter, cut into 8 pieces
Half of a cup of firmly packed light brown sugar
One third of a cup light corn syrup
Half a tsp. salt
1 cup of finely chopped walnuts, toasted
Half a cup or all-purpose flour
Half a cup of old-fashioned oats
1 tsp. vanilla extract
2. Drop batter by level teaspoonfuls onto prepared sheets, spacing 3" apart. (leave 2" between dough and edges or baking sheets).
3. Bake 6-7 minutes, until golden. Cool 2 minutes on sheets or until cookies are firm enough to pick up with spatula.Place on wire racks to cool. Do NOT ovelap cookies. Repeat process until batter is finished.
