1 cup quinoa
12 oz mushrooms, chopped
4 oz onion chopped
1 tsp rosemary
.75 T butter, unsalted
2.5 t of chicken bouillon
1 clove garlic
In a large cast-iron skillet, that's been heated, saute the mushrooms w/rosemary and pepper flakes, until tender...set aside.
In sauce pan, melt .75 tbsp of unsalted butter. Add chopped onion and chopped garlic. Cook until tender. Add 5 cups of water and 2.5 tsp of bouillon. Bring to a boil. Add the quinoa and barley and mushrooms and stir together. Bring water to boil again, then reduce to simmer and cover and cook for 35 min, or until barley is cooked....
