4 Cups Long grain whit rice (cooked and chilled)
2.5 Tbsp Rice Vinegar
4 tsp Sugar
6 Sheets Sushi Nori (seaweed sheets)
1/4 Cup Cucumber, peeled and sliced into thin strips.
1/4 Avocado, sliced into thin strips.
2. Spoon layer of rice on Nori sheet.
3. Place Cucumber and Avocado strips about 1/2 inch from edge of Nori sheet.
4. Spoon second layer of rice over vegetables.
5. Roll sheet.
6. Cut roll into 9 pieces. (Each roll is 1 serving.)
(hint: to make construction easier, use a sushi kit instead of rolling.)
