-2 Medium Apples, chopped into bite-size pieces (Any crunchy apple will work, I use Braeburn)
-3 small celery stalks, chopped into bite-size pieces
-1/2 Cup Dried Cherries (You can also use dried cranberries, raisins, or a combination of any of these)
-1/2 Cup chopped Walnuts
-1 Tablespoon Lemon Juice
-2 Tablespoons Honey
-2 Tablespoons Low Fat Vanilla Yogurt
-2 Tablespoons smooth Peanut Butter
-In a separate smaller bowl, combine lemon juice, honey, yogurt, and peanut butter. Whisk together until combined.
-Add the honey/lemon juice/yogurt/peanut butter mixture to the larger bowl with the fruit and toss to coat.
-Serve immediately or keep in the refrigerator until ready to use
-Makes 6 servings (about 3/4 c. serving size)
