Spinach Potato Au Gratin

Introduction

A surprisingly low-cal, nutrient-rich twist on a classic. Can be used as a vegetarian meal in itself, or a side-dish. A surprisingly low-cal, nutrient-rich twist on a classic. Can be used as a vegetarian meal in itself, or a side-dish.
Number of Servings: 4

Ingredients

    1 can (15 oz.) sliced white potatoes, drained
    1/4 cup canned spinach, drained
    1/4 cup vegetable stock or broth
    1/4 cup skim milk
    4 oz silken tofu
    1/2 cup shredded cheddar-jack cheese
    1 tsp black pepper

Directions

Preheat oven to 375 degrees.

Blend tofu until smooth. Mix together with all ingredients in 9" square glass baking dish.

Bake uncovered at 375 for 10 minutes. Increase temperature to 425 and bake for another 30 minutes.

Let cool for 5-10 minutes (so the liquid will thicken up) and serve.

Makes 4 servings.
