Mrs. Gannon's Tuna-Cashew Casserole

Introduction

This is a recipe from my husband's childhood. Mrs. Gannon was a neighbor of his family and she is the woman who gave his mom this recipe. Every since it has been called "Mrs. Gannon's". I have been able to reduce the calories, fat & sodium by using more modern ingredients, but it is still another one of those great, easy comfort food casseroles. Number of Servings: 4

Ingredients

    1/3 cup diced celery
    2/3 cup diced onion
    2- 6oz cans of tuna fish, in water, drained (reserve liquid)
    10 1/2 oz can of mushroom soup
    2 oz lightly salted or unsalted cashews pieces
    3 oz of liquid from the canned tuna or water
    5 oz crunchy chow mien noodles

Tips

I serve this with a green vegetable and whole berry cranberry sauce. YUM!


Directions

PREHEAT the oven to 350 degrees

COMBINE all the ingredients, except the chow mien noodles, together in a large bowl. Stir to combine.

IN a 2-quart square casserole dish, sprinkle 1 1/2 oz. of the chow mien noodles. Spoon the tuna mixture over the noodles. Top with the remaining chow mien noodles.

BAKE, uncovered, for 25 minutes
