Mrs. Gannon's Tuna-Cashew Casserole

Introduction

This is a recipe from my husband's childhood. Mrs. Gannon was a neighbor of his family and she is the woman who gave his mom this recipe. Every since it has been called "Mrs. Gannon's". I have been able to reduce the calories, fat & sodium by using more modern ingredients, but it is still another one of those great, easy comfort food casseroles. Number of Servings: 4

Ingredients

    1/3 cup diced celery
    2/3 cup diced onion
    2- 6oz cans of tuna fish, in water, drained
    10 1/2 oz can of mushroom soup, Campbell's Healthy Request
    2 oz lightly salted cashews
    2 oz unsaled cashews
    3 oz water or liquid from the canned tuna
    5 oz chow mein noodles

Directions

1. Pre-heat the oven to 350
2. Combine all the ingredients, except the chow mein noodles, together in a large bowl. Stir to combine.
3. In a 2-quart square casserole dish, sprinkle 1 1/2 oz. of the chow mein noodles. Spoon the tuna mixture over the noodles. Top witht he remaining chow mein noodles.
4. Bake, uncovered, for 25 minutes
