Velvet Lemon Sauce

Introduction

Very good on fish, poultry and my personal favourite: asparagus Very good on fish, poultry and my personal favourite: asparagus
Number of Servings: 8

Ingredients

    1/2 Cup of butter (salted)
    1 raw egg
    1 tbsp shallot, finely chopped
    2 tbsp lemon juice
    Salt & Pepper to taste

Directions

On a double boiler with water gently simmering add butter, onions and lemon juice till all the butter is melted. Add egg whisking continually. Add salt & pepper and continue to whisk until sauce is thickened. Remove from heat and serve over fish. Wonderful sauce. Everyone I've made this for absolutely loved it.
