For Pie Filling:
JELL-O Lemon flavor Pie Filling Mix 2.9 oz. box
1/2 cup sugar
1/4 cup water
2 egg yolks
2 more cups of water
3 egg whites
1/3 cup of sugar
Stir mix, sugar, water, and egg yolks in medium sauce pan. Stir in 2 cups of water. Stirring constantly with wire wisk, cook on medium heat until mixture comes to a full boil. Cool 5 mins. stirring twice. Pour into cooked 9 inch crust.
Beat egg whites in large bowl with electric mixer on high speed until foamy. Gradually add sugar, beating until stiff peaks form. Spread over filling, sealing to edge of crust. Bake at 350 degrees for 10 to 15 muns. or until meringue is lightly brown. Cool at room temperature at least 4 hours. Store in refridgerator.
