Introduction

This is really a cross between a soup and a stew
It is a really cheap dish that easily feeds a family but takes time as the oxtail has a lot of fat and if it is not allowed to chill overnight and then the fat removed, the calorie value and fat content will be sky high.
The final taste is worth the trouble though.

Number of Servings: 8

Ingredients

    500g oxtail (beef tail)
    1 med carrot, roughly chopped
    1 med onion, roughly chopped
    1 med potato, roughly chopped
    1 med carrot. diced, extra
    1 med sweet potato, diced
    400g pumpkin, peeled and diced
    350g can red beans, drained and rinsed
    2 cups finely shredded cabbage
    1/4 cup pearl barley, rinsed
    440g can diced Italian tomatoes with basil and herbs, undrained. then wash tin out with
    3/4 tin water

Directions

Put the oxtail (trimmed of visible fat) into a crockpot,
Roughly chop the onion, potato and 1 carrot and add to the meat in the crockpot.
Cover with water, set on Auto and cook about 6hrs until meat is very tender.
Cool.
Remove vegetables to airtight container and store in refrigerator.
Remove meat from bones, disgarding fat and bones. Put roughly shredded meat into airtight container in fridge.
Put stock into container in fridge.'
Leave overnight
The next day, skim fat from stock, and from meat if any visible.
Put stock, meat, and vegetables back in crockpot, add rest of ingredients, including 3/4cup water used to wash out the tomato tin and cook 6hrs on Auto until everything is tender.
