zucchini, 2 cup shredded
scallions, raw 1 cup chopped
egg, 3 fresh
flour, whole grain 1 cup
black pepper 1 tsp
Chop (or cut with kitchen scissors) scallions
Mix zucchini, scallions, eggs, flour (and salt and pepper if you choose - not included in my nutritional information).
Coat pan with olive oil spray
Make mix into "patties" and cook on medium heat until done.
Goes well on a sandwich with lettuce, tomato, and ketchup!

I added 6 shredded baby carrot, 1/2 of a medium-sized corn on the cob, and reduced the onions to 2stalks (is that what scallions arecalled)
Next time I will try usuing only 1/2 cup of flour, since a cup of what I used was 400 calories. Since this was my dinner, I ate four servings out of the nididn - 6/8/11
