Salmon Patties

Introduction

This is one of my husband's favorite meal. This is one of my husband's favorite meal.
Number of Servings: 4

Ingredients

    1 can pink salmon
    1 large egg
    .25 cup yellow cornmeal
    2 tbsp extra virgin olive oil

Directions

Drain the juice from the can of salmon. Mix salmon, egg and cornmeal together in a bowl using your hands. Form 4 patties from this mixture. You don't want the patty to fall apart but you want to be careful not to add to much more cornmeal as the patty will taste dry. Grease your frying pan with olive oil. Cook each side until golden brown.

  • Great recipe. I make this with matzo meal instead so it's good for Passover. I add grated onion, and a spoonful of sour crean to lighten the mix. - 3/30/09
