Amy's Cabbage Soup

Introduction

Hearty vegetable soup that is light on calories. Hearty vegetable soup that is light on calories.
Number of Servings: 16

Ingredients

    1 medium savoy cabbage, shredded (about 12 cups)
    3 carrots, diced
    1 parsnip, diced
    1 stalk celery, diced
    1 med/small white radish, diced
    1/2 leek, diced
    1 small onion, diced
    32 oz container reduced sodium chicken (or veggie) broth
    6 cups water
    1 tbsp garlic powder, or 4 fresh cloves minced
    1/4 tsp black pepper, or to taste
    2 springs dill, minced finely
    2 springs parsley, minced finely
    2 tsp salt, or to taste

Directions

Rinse and chop all veggies. Put in large pot and add broth and water. Bring liquid to boil. Cover and simmer (stirring occasionally) until cabbage is wilted and root veggies are cooked through. Add pepper, garlic, herbs and salt and cook another 15 minutes, stirring occasionally. Serve hot.

Make about 16 one-cup servings.
