Low Fat Corn Chowder

Introduction

This soup is a really treat and has helped me stick to my diet on many occassions. This soup is a really treat and has helped me stick to my diet on many occassions.
Number of Servings: 5

Ingredients

    2 Cups Sweet Corn fresh or frozen.
    1/2 Cup Diced Carrots
    2 cup Milk, nonfat,
    1 Potato (baked)
    100 grams Diced Ham or Peameal Bacon
    1/2 Cup Diced Celery
    1/2 Cup Onions Diced
    Garlic, 3 cloves, Chopped
    Olive Oil, 1 1tsp
    Hot Sauce, salt and pepper - to taste

Directions

Heat oil in large pan, add corn, celery, carrots, onion and garlic and saute for about 5 minutes.

Pierce potato and microwave until cooked, about 8 minutes (or bake in over if preferred) Once cooled scoop out flesh and add to pot with milk, ham and seasonings.

Cover and simmer on low for stirring occasionally for about 15 minutes but do not allow to boil.

Enjoy.

Makes about 5 servings of 1 to 1.5 cups each.
