Oopsie Chocolate Cake (low carb)

Introduction

I kinda mixed up my own version of the oopsie rolls by Cleochatra.blogspot.com

I used the convential oven adjust the time for regular ovens!

I cut it into 4 slices..it could also be cut smaller, or make great cupcakes

Number of Servings: 4

Ingredients

    *CAKE*
    2 eggs
    2oz light cream cheese (not softened)
    1tsp vanilla extract
    pinch cream of tarter

    *topping*
    1/2 cup heavy whipping cream
    4 packets of splenda
    1 tbsp coco powder

Directions

*CAKE*
PREHEAT convential oven to 350

I used the convential oven adjust the time for regular ovens!

1) Serperate yolk from egg whites and place into seperate bowls...

2) In bowl with egg whites add cream of tarter and whip with electric mixer for about 3-4 mins. Mixture should thicken up (make it THICK!)

3) Next mix yolk, cream cheese and vanilla together until smooth.

4) Very carefully fold the yolk mixture into the egg whites slowly, adding a little at a time. This step is very important! DO NOT mix to quickly of the egg whites will fall.

5) Spray cake pan REALLY well!

6) Place spoonfuls of mixture into pan (DO NOT pour, it will make batter flat) and smooth gently

7) place in oven and cook for about 20 mins until top turn slightly brown

**TOPPING**

1) Mix all ingredients together with mixer for 3-4 mins until creamy (looks like cool whip)

2)place in fridge until cake is done

place the cake out to cool for about 10 mins. Dont worry if it falls a little, (it flattens out). Remove from pan carefully and spread topping on carefully.

Eat and enjoy!
