Wheat Protein and Fiber Bar

Introduction

100 calorie homemade protein and fiber bar. They pretty much are chocolate coated bran muffins, but no hidden ingredients! 100 calorie homemade protein and fiber bar. They pretty much are chocolate coated bran muffins, but no hidden ingredients!
Number of Servings: 12

Ingredients

    For bars:
    2/3 cup nonfat dry milk
    4 large egg whites (or 5 medium)
    1/3 cup dry wheat bulgur
    2/3 cup dry wheat bran
    1/3 cup wheat germ
    1 tbsp unsweetened cocoa powder
    1/4 water
    1 tbsp honey or agave nectar
    2 packets desired sweetener (I used SweetLeaf stevia)

    Chocolate Coating
    1/4 skim milk
    1 1/2 tbsp shortening (mine is 100% palm oil, coconut oil would work too)
    1/3 cup sugar (raw, organic is best, but I just used granulated)
    3 tbsp cocoa powder

Directions

For bars:

mix all ingredients together well
pour into 9x9 square pan
bake at 350 for about 20-25 min until they are set (toothpick comes out clean)
Cut into 12 bars

For chocolate topping
mix shortening, milk, and sugar in a saucepan and heat until sugar starts to caramelize (brown slightly)
add in the cocoa powder
spread warm chocolate on top of cool bars
once cool, the chocolate will not be hard, but will not be sticky.
