8 large fresh eggs, four separated with yolks discarded
1 cup 1% or skim milk
4 tbsp pesto, from the deli or homemade
3 oz romano cheese, shredded
2 chicken italian sausages, cooked and sliced into 1/4 inch slices
1 medium onion, diced
4 garlic cloves, smashed and minced
2 cups of fresh steamed or frozen spinach washed and drained
Beat together eggs with milk until fluffy, fold in pesto. Mix in cheese, sausage, onion, garlic and spinach with a spatula. Pour into 9x9 square pan that has been greased with non-stick cooking spray and bake for 40-45 minutes or until fluffy and firm. Serves 4.
