1 C. fresh blueberries
1 Mango cubed
2 - 1 Tb. Honey
1 Tb. Whole Wheat Flour
1 Tb. Lemon Juice
1/2 tsp Nutmeg
3/4 tsp Cinnamon
1/8 C. Quick Oats
1/8 C. Bran
1/8 C. Grape-Nuts Cereal
1 tsp Olive Oil
1/2 C. Lowfat Vanilla Ice Cream (optional and already included in nutritional info)
Preheat oven to 375 degrees.
In a medium bowl combine the blueberries, mango, 1 tbsp honey, flour, lemon juice, Â¼ tsp nutmeg, and Â¼ tsp cinnamon. Set aside.
In a small bowl, combine the quick oats, bran, grape-nuts, oil, Â½ tsp cinnamon, Â¼ tsp nutmeg and remaining tbsp of honey. Work with a spoon until topping comes together.
Equally distribute the blueberry-mango mixture into 4 individual custard or tart pans. Top with the cereal mixture and bake for about 20 minutes. Serve with a dollop of vanilla yogurt or fat free whipped topping!
---(I substituted lowfat vanilla ice cream into the nut. info. instead of the yogurt or whipped topping because that's my fav!)
