1 lb raw shrimp, peeled and deveined. 12 Tbsp or 1c Pace Picante Sauce (hot or medium) 2 cups Romaine Lettuce shredded. 8 Tbsp Guacamole 1 cup low or not fat sour cream. 4 whole wheat tortillas.
In a large non stick skillet pour the picante sauce and heat on medium heat until it starts to bubble.Quickly add the shrimp and cook until the shrimp is pink and tender (5-7 min.). Pour shrimp and sauce into a bowl. Heat tortillas in microwave for 30 sec. or until they are warm. On a large plate place I tortilla and add 1/4 of the shrimp and salsa,1/2 shreddded lettuce,2 Tbsp guacamole, and 1/4 c sour cream.Roll up the tortilla and enjoy.Makes 4 servings.
