IntroductionMade with whole wheat cheese ravioli, fresh spinach and deli turkey breast. Perfect for a rainy weekend lunch! Made with whole wheat cheese ravioli, fresh spinach and deli turkey breast. Perfect for a rainy weekend lunch!
4 c. Low Sodium Chicken Broth
5 oz. Deli-style turkey breast (sliced approx. 1/2 inch thick and cut into cubes)
1 c. Onion, coarsely chopped
3 c. Fresh spinach, coarsely chopped
9 oz. Whole Wheat 4-Cheese Ravioli
1 tsp. Chopped or Minced Garlic
2 tbsp Chopped fresh herbs (or 2 tsp dried)
Add ravioli and turkey breast and simmer until ravioli cooked, stirring occasionally. (Approx. 6-8 minutes).
Add spinach, garlic and chopped fresh herbs (if desired), simmer 1 minute or until spinach is tender.
Remove from heat and allow to cool slightly. Serve immediately. Makes 4 servings.
Optional - sprinkle 1 tbsp. fresh grated parmesan on top before serving. (Not included in calorie totals).
