This is the salad that Russians make on every Birthday, New Year or any other significant celebration. Number of Servings: 6

Ingredients

    4 Red Potatoes
    2 Medium carrots
    2 Hard Boiled Egg
    2 Dill Pickles (try to get it from Russian store)
    1/2 cup Mayo
    0.5 lbs Bologna, beef (or chicken, meat)
    1/2 cup Green Giant Peas
    1/2 onion (optional)

Directions

1) Hard boil potatoes, carrots, eggs (about 20 min) with skin and let cool
2) Cut into very small pieces boiled potatoes, carrots, eggs place in a large bowl
3) Cut into very small pieces pickles, bologna (chicken or meat) and add to the large bowl
4) Add green peas
5) Add mayo to taste
6) Add salt/pepper to taste
7) Add cut dill or parsley on top
8) Chill and serve
