Pasta Toss

Introduction

Low-fat pasta toss with sundried tomatoes, beans, broccoli and parmesan cheese. Low-fat pasta toss with sundried tomatoes, beans, broccoli and parmesan cheese.
Number of Servings: 4

Ingredients

    Beans, great northern, .75 cup (remove)
    Broccoli, fresh, 1 bunch (remove)
    Sun Dried Tomatoes, 28 grams (remove)
    Olive Oil, 2 tbsp (remove)
    Chicken Broth, 1 fl oz (remove)
    Pasta, cooked, 8 oz (remove)
    Parmesan Cheese, shredded, 2 tbsp (remove)

Directions

1. Cook macaroni according to package directions. I prefer orecchiette pasta, but you can use any shape.

2. Add broccoli to cooking water last 5 minutes.

3. While broccoli and pasta is cooking chop sun-dried tomatoes into strips. Place in a cup with 2 Tbs olive oil and broth.

4.Drain pasta and broccoli into a bowl when done. Add kosher salt and ground black pepper.

4. Add beans, the sun-dried tomatoes, capers and lemon juice.

5. Toss the mixture together and top with parmesan cheese.
