Potato Bacon Chowder

Number of Servings: 6

Ingredients

    2 cups cubed peeled potatoes
    1 cup water
    8 butterball turkey strips, cooked
    1 cup chopped onion, sauted
    1/2 cup chopped celery
    1 can cream of chicken soup, undiluted
    1 3/4 cup 1% milk
    1 cup reduced fat sour cream
    dash of pepper
    i tbsp minced fresh parsley

Directions

Combine everything into a crock pot and let cook from 4 - 6 hours.

You can also cook the potatoes in 1 cup water until tender. Meanwhile, cook bacon in a skillet until crisp; remove to paper towels to drain. In the same skillet, saute onion and celery in drippings until tender; drain. Add to undrained potatoes. Stir in soup, milk, sour cream and pepper. Cook over low hear for ten minutes or until heated through; do not boil. Crumble bacon; set aside 1/4 cup. Add remaining bacon to soup along with the parsley. Sprinkle with reserved bacon.


Makes 6 servings.
