Saffron Couscous Paella

A lighter version of this seafood classic made with rice. You can add a little spicy sausage if you like although that will increase the calorie and fat value of the recipe. Ingredients

    1 tbsp. olive oil
    1 med. onion chopped
    3 cloves garlic chopped
    1 cup sweet red pepper chopped
    1 tsp. salt
    1/2 tsp pepper
    1/2 tsp. thyme
    1/2 tsp. red pepper flakes
    1/2 tsp turmeric
    5 strands saffron (ground up)
    14.5 ounces low sodium chicken broth
    1 cup water
    1 1/4 cup frozen peas
    400 grams raw peeled shrimp
    300 grams bay scallops
    2 cod or sole fillets cut into 3 pieces each
    1 (10 ounce) box couscous

Directions

1. Heat oil in large heavy bottomed pot. Add oinion, garlic, sweet peppers; cook until tender about 5-6 mins.
2. Add spices and cook 1 minute more.
3. Add broth, water, peas and seafood. Simmer, covered for 2-5 minutes - it should be nice and hot, this can take longer because of frozen peas.
4. Remove from heat. Stir in couscous, cover, let stand 5 minutes. Fluff gently before serving. Garnish plate with a lemon wedge.
