1/2 block extra firm tofu, pressed
5 tips fresh asparagus, chopped
1/2 cup red bell pepper, chopped
1/4 cup carrot, chopped
3/4 cup snow peas, trimmed
1 cup shiitake mushrooms, stems removed and cubed
1/4 cup red onion, chopped
1 tbsp sunflower oil
2 tbsp low sodium soy sauce
1.5 cup white long grain rice
Heat wok or sautee pan on high. Add oil and add ingredients, stirring constantly to avoid sticking. Add soy sauce and cover pan to cook vegetables. Continue cooking to personal taste.
Serve vegetables and tofu over 1/2 cup rice. ENJOY!
