Butternut Squash Pie

Introduction

What do you do with extra squash? Make pie! What do you do with extra squash? Make pie!
Number of Servings: 8

Ingredients

    1 butternut squash, roasted & peeled
    1/2 cup part skim ricotta
    2 large eggs
    1/2 cup sugar
    3 T honey
    1 t butter- room temp
    1/2 cup flour
    dash salt
    1 t cinnamon ground
    1/2 t cardamom ground
    1/4 t cloves ground

Directions

Mash the roasted butternut squash- it will let out a lot of water. This is okay. Add the room temp butter, honey, eggs, and ricotta. Add the spices and flour. Start by adding 3 T of flour, add more as needed until the mixture is thick- like the consistency of brownie batter. Pour into a lightly greased or nonstick 9 inch pan. Bake at 350 for 35-45 minutes, or until set. Let cool at least 15 minutes before serving. Also great cold!

Refrigerate leftovers.
