Introduction

Spicy sweet corn, mixed with Rotel with chilies and cream cheese to make a quick and easy side dish for the family. Spicy sweet corn, mixed with Rotel with chilies and cream cheese to make a quick and easy side dish for the family.
Number of Servings: 3

Ingredients

    1 can of Sweet Yellow Corn (12 oz)
    1 can of Rotel, Tomatoes and Chilies (10oz)
    3 oz Philadelphia Cream Cheese
    1 Tbsp of butter
    1/4 cup of 2% milk
    salt and pepper to taste

Directions

Add 1 can of drained corn to a medium saucepan. On medium heat. Cook until lightly boiling. Then add 2-3 oz of cream cheese depending on your taste. Then add 1 tbsp of butter. Let it simmer until it comes to a soft boil, lower the heat. Add the milk to keep it moist. Add a small amount at a time. Then add the Rotel to your taste, depending on spicy you want it. Strain it with a fork to limit liquid. Add salt and pepper to taste. Enjoy!
