P90X Oatmeal Pancakes



Introduction

Number of Servings: 4

Ingredients

    1/2 C. Quaker Oats (ground in blender)
    1/2 C. Buttermilk, lowfat
    1/2 C. Fat Free Milk
    1/2 C. Eggbeaters
    1 T. Unsweetened Applesauce
    2 T. Brown Sugar
    1 t. Baking Powder
    1 t. Cinnamon
    1 t. Baking Soda
    1 C. Whole Wheat Flour

Directions

Combine oats, buttermilk, and milk and set aside for 5 minutes to let the oats soften.

Beat the eggbeaters and applesauce together and add to milk mix. Add the sugar, cinnamon, baking powder, soda and flour. Stir just until moist.

Using an 1/8 measuring cup, scoop batter onto sprayed, hot, non-stick skillet. Cook until both sides are browned. Turning only once.
