IntroductionMy husband's favourite Chicken Curry, very simple to make! My husband's favourite Chicken Curry, very simple to make!
2 Chicken Breast halves, boneless, skinless - cubed
1 large onion, thinly sliced
2 plum tomatoes, diced
1 tsp ginger, minced
1 tsp garlic, minced
1 tsp tomato paste
1/2 tsp salt
2 tsp curry powder
1 tsp canola oil
3/4 cup evaporated milk
2. Add curry powder and cook for 1 minute. Add tomatoes and cook until reduced and well combined, approx 5-7 minutes.
3. Add chicken, tomato paste and salt and cook until chicken is no longer pink.
4. Add evaporated milk, stir, and simmer until chicken is cooked through.
Serve over rice or enjoy with fresh naan.
