Cranberry Chicken

Introduction

This is an easy delicious recipe that goes well with green vegetables or on top of a small bed of rice. This is an easy delicious recipe that goes well with green vegetables or on top of a small bed of rice.
Number of Servings: 4

Ingredients

    4 TBS Olive Oil
    4 TBS Dijon Mustard
    4 Boneless, Skinless Chicken Breasts
    1 Can of Cranberry Sauce
    3 TBS Red Wine Vinegar
    6 TBS of Chicken Broth

Directions

First, you want to take 1/2 of the Dijon Mustard, the Olive Oil, Red Wine Vinegar and Chicken Broth and place in a small bowl and set it aside. Take the other 1/2 of the mixture and brush completely over both sides of the chicken. Spray or coat a pan with olive oil and cook the chicken on both sides until done. Remove the chicken. Add the Cranberry Sauce to the remaining 1/2 mixture and stir until well mixed. Add to the pan and still until the sauce is hot. Remove and immediately pour over the chicken breasts and serve.
