Succelent White Beans

The aroma is enticing! This was my first time trying this. It can be cooked on stovetop but I'm using the slow cooker on low for 6 hours, adding the tomatoes after 4 hours. The garlic and herbs give an appetite for this dish. Can't wait to dig in!NOTE: The prep time includes overnight soaking time for the beans. The cooking time is approximate for stovetop cooking time. Ingredients

3/4 lb Great Northern Beans
8 cups water
2 bay leaves
2 Tbsp EVOO(or use olive oil spray)
2 large cloves garlic, sliced
1/2 tsp dried thyme
1/2 tsp dried sage
3 ripe plum tomatoes, quartered lengthwise
2 cups Natural Goodness chicken broth
Black pepper to taste
2 Tbsp chopped fresh flat leaf parsley
Directions
Pick over the beans, discarding any stones. Soak them overnight in cold water to cover by 2 inches.
Drain the beans, rinse in several changes of cold water and drain again. Place the beans in a large heavy pot, and add the 8 cups water along with the bay leaves. Bring to a boil over high heat. Reduce the heat to medium and simmer unil the beans are tender but not mushy, 40-45 minutes. While they are cooking, skim off any foam that rises to the surface. Remove the pot from the heat.
In another heavy pot, heat the olive oil over medium low heat. Add the garlic and cook until lightly browned, 4-5 minutes. Add the teans sage tomatoes, broth and cook over medium heat for 5 minutes. Season with black pepper to taste, garnish with parsley and serve.

I'm confused about the recipe. ...add the teans sage tomatoes... Are you saying add the thyme, sage & tomatoes? Do you mix the beans with this mixture? - 4/11/10

Excuse my typing. It should be add thyme, sage and tomatoes. I hope you like the recipe if you should try it!
