Ingredients

    2 cups low sodium vegetable broth
    2 cups diced raw potato
    1 cup chopped carrot
    1/4 cup chopped raw onion
    2 cups sweet corn, fresh or frozen
    1 can (12 oz) nonfat evaporated milk
    3/4 cup low fat shredded cheddar cheese
    1/4 teaspoon black pepper (freshly ground if possible)

Directions

In a large saucepan, bring broth, potato, carrots, and onions to a boil. Lower heat to simmer and add the corn. Cook for 15 minutes or until vegetables are tender. (This depends on the size they are cut.) Add milk, cheese, and pepper; cook for 3 - 5 minutes until cheese is melted and soup is heated through.
Makes 8 1-cup servings.
