White Italian Chili

Introduction

I added the dry Italian dressing mix by accident, and "created" a delicious chili that everyone seems to like. I added the dry Italian dressing mix by accident, and "created" a delicious chili that everyone seems to like.
Number of Servings: 8

Ingredients

    1 cup chopped onion
    2 cloves garlic, minced
    1 tablespoon olive oil
    2 (15-oz) cans great northern beans, drained
    1 (14.5) can fat-free chicken broth
    2 (4-oz) cans diced green chilies
    1 package dry Italian dressing mix
    4 cups cubed, cooked chicken breast

Directions

In a 4-quart pot, saute the onion and garlic in oil until onions are tender. Sitr in beans, chicken broth, chilies and seasoning. Bring to boil; reduce heat and simmer 10 minutes.
Stir in chicken; heat through. Garnish if desired with Monterey Jack cheese, salsa, and cilantro (not included in nutrition information). Yield: 8 servings, about 1 cup each.
